Nicolini's is looking for 3 Chefs/Commis,CDPs for their busy inner city Italian restaurant located on the outskirts of CBD.Their mission is to bring authentic ageold recipes to the local community using local produce and imported ingredients. The restaurant showcases 3 dining areas including a private dining catering to more intimate occasions with bespoke menu, bar & a resident pianist. 3 years of relevant experience required. Proven ability in Italian cuisine is highly desirable.
- Maintain & exhibit extensive all round food knowledge in all areas of the kitchen including pastry/ bakery, pasta & grill
- Prepare and cook high quality Italian dishes such as bread, cakes, pasta, soups, sauces, meats, profiteroles, Tiramisu, etc.
- Must have excellent knife skills with the ability to multitask.
- Maintain portion control & consistency across all menu items.
- Keep food & labour costs to establishment's requirements.
- Maintain cleanliness, order & hygine including general cleaning duties such as dishes, sweeping & mopping.
- Must have strong communication skills- must be able to follow instructions well.
- Follow and maintain food safety, hygiene and workplace safety standards.
- A sense of humour.
Previous experience in a high volume, well recognised restaurant dealing with high expectation clientele preferred.
